First experiment using sodium citrate to make cheese dip. Results can be classed as a failure because I screwed up the ratios turning the cheddar into a mozzarella-like texture rather than a creamy dip consistency. 
Still, I now know what I should do next. That's the value of repeating something after a failure, except when it comes to cooking, it can still be delicious. 
I topped the dip with caramelised onions and jalepenos in case anyone was wondering. It's still delicious, just not movie or game night snack worthy.
